This superb, simple recipe is a particular favourite of mine, as it combines some of my favourite flavours, and includes ‘11 no-longer secret herbs and spices’. It’s a particularly good recipe to use with an air fryer convection oven.

Preparation time: 10 minutes

Cooking time: 16 minutes

Serves: 6


Ingredients

12 chicken drumsticks (chicken tenders can also be used)

Quarter cup finely crushed cornflakes

1, 1/4cups plain all-purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon ground white pepper

1/2 teaspoon smoked paprika

1 teaspoon celery salt

1 teaspoon onion salt

1-2 tablespoons of chicken stock powder

Sunflower Oil for deep frying

How to make Crispy Fried Chicken

Place the drumsticks in a large saucepan of water boiling water, reduce heat and simmer uncovered, for 8 minutes, or until the chicken is almost completely cooked. Drain water.

Combine cornflakes sifted flour celery salt onion salt stock powder garlic powder and white pepper in a medium bowl place the chicken drumsticks in a large bowl and cover them with cold water.

Dip wet drumsticks, one at a time, into the seasoned flour mixture and shake off excess.

Heat oil in a deep heavy-based pan.  Carefully add drumsticks to the pan and cook a couple at a time over medium-high heat for 8 minutes or until the chicken is golden and fully cooked.

Place chicken drumsticks on paper towels to soak up the excess oil.  Repeat with remaining chicken drumsticks. Serve hot.
