Ingredients
125 g of cream
Butter
1 cup of brown sugar
2 eggs beaten well
1 cup milk
1 ½ cups chopped dates
1 cup chopped walnuts
3 cups self-raising flour sifted
Cinnamon, ground
How to make a date and walnut loaf
Preheat oven to 180 degrees.
Combine 125 g of cream butter and one cup of soft brown sugar in a medium-sized bowl.
Add the two eggs one at a time beating well after each is added.
Blend one cup of milk, one ½ cups of chopped dates and one cup of chopped walnuts into the mixture.
Lightly fold 3 cups of self-raising flour into the mixture. Pour the mixture into 2 greased 14 x 21 cm loaf tins and bake for 35 to 40 minutes. Remove from cake tin and place it on a rack to cool.
Serve slices with butter and optional cinnamon sprinkled over the top. This dessert is nicely paired with strawberries, whipped cream, and a Moscato dessert wine. Store in an airtight container in the fridge.
