Ingredients
3 cups cream
8 egg yolks
Half cup caster sugar
1 teaspoon vanilla essence
3 teaspoons sugar
Plums in lime:
825 g canned pitted plums
1/3 cup of lime juice
1/3 cup sugar
Zest of 2 limes, finely grated
How to prepare Crème Brûlée with plums in lime
Put the cream and vanilla beans in a large, heavy-based pan, bring it to a boil, and then remove the pan from the heat. Put to one side.
Remove vanilla beans, rinse and keep the beans to use them again.
Whisk the egg yolks and sugar in a large heatproof bowl until the mixture is thick and pale. Put the bowl over a pan of simmering water, stirring constantly until the mixture is just warm.
Slowly, add cream to the egg mixture this mixture for 10 minutes. Continue to stir until the mixture thickens slightly, and coats the back of the mixing spoon.
Remove from the heat, and stir the vanilla essence through.
Spoon the mix into 6 2/3 of a cup capacity heatproof ramekins, or small ovenproof bowls. Refrigerate for approx. 2 hours, or until set.
To make Plums in Lime:
Combine all of the ingredients in a medium heavy-based pan over low heat until the sugar has completely dissolved bring to a boil reduce heat and simmer stirring occasionally keeping the Plums hole for 40 minutes or until the liquid has reduced and thickened remove from heat then set aside to cool.
Approximately 30 minutes before serving the truly spectacular Creme Brulee with Plums in Lime, sprinkle half a teaspoon of sugar over each custard and place in large ice packs baking dish the preheated hot grill until sugar caramelise is about 10 minutes serve immediately accompanied by the plums in lime.
